Padmaja is a Civil Engineer by profession and also a Chef and food writer. Paddy (as she is known) loves home cooking and has infectious enthusiasm for authentic Indian cuisine. In 2008, she was a winner on the BBC 2 programme ‘Step Up to the Plate’ which challenges the talents of upcoming chef against Paul Rankin and John Burton Race.
Paddy spent her childhood eating authentic Indian food. Her cooking style is simple, authentic and flavoursome. She has an experimental style, which incorporates trying new techniques and methods to provide her own twist on traditional Indian recipes.
Recreate a full South Indian feast on this course with Padmaja. You will learn how to use ingredients such as tamarind, coconut, curry leaves and a variety of spices that make the food of this region so fresh and delicious. You will cook foods from southern Indian states including Tamil Nadu, Andhra Pradesh and Karnataka, each state has different varieties of dishes and methods of cooking. South India is known for its varied range of spices, it most notably produces cinnamon, cardamom, nutmeg, cloves and pepper. So many people love an Indian curry but don’t know how to cook it or recreate that authentic Indian flavour at home. Padmaja will introduce you to Indian spices and give you a hands on experience, so you can learn how to cook simple, yet delicious Indian dishes in the comfort of your own kitchen!
